Chimayo is an exceptionally early Capsicum annuum cultivar, which produces ripe chillies some two weeks earlier than a typical bell pepper. The red chillies are of good size and of moderate pungency.
Chimayo dries well and is excellent for making ristras, making it a dual purpose culinary / ornamental variety.
